Welcome to week #2 of the Whip it Up Challenge!
This week's recipe theme was cheese.... and I think my recipe falls well within the guidelines.
My recipe this week came from my newest cookbook "Hungrygirl: Recipes and Survival Strategies for Guilt Free Eating in the Real World. This book is full of portion controlled and low calorie recipes and tips that are so yummy I cannot wait to make them all.

Crazy- Creamy Crab Stuffed Mushrooms
12 Medium brown mushroom caps
2 ounces drained white crabmeat
2 tablespoons minced celery
2 tablespoons minced red bell peppers
1 wedge The Laughing Cow Light Original Swiss Cheese
1 tablespoon fat free cream cheese
1 tablespoon fat free sour cream
2 ounces drained white crabmeat
2 tablespoons minced celery
2 tablespoons minced red bell peppers

1 tablespoon fat free cream cheese
1 tablespoon fat free sour cream
1. Preheat oven to 375 degrees.
2. Wipe mushrooms clean with a damp paper towel and then dry them with a dry paper towel. Place rounded side down, on a baking dish sprayed lightly with non stick spray.
3. Mix all the other ingredients thoroughly. Evenly spoon crab mixture into the mushroom caps.
Was the recipe easy to follow?: Totally. It really couldn't get any easier. I think that's one of the themes of her book. Quick, easy, WW friendly and good for you!
Did the Dish Taste Good? It was pretty good. It was not as crabby as I thought it was going to be. But maybe next time i'll add more crabmeat.
Would you make it again? Definitely. I think I may make some and take it to the next family function. I think Tim's family would really love them.

Yum! One of my best friends just told me about the Hungrygirl cookbook and said the same thing - that I absolutely had to get it! Glad to see you're enjoying it as well, and I think I am going to use this exact recipe on Sunday!
I like hungry girl, but sometimes I need to take a break from the site because... she's just TOO diety for me. However, I believe MamaSass has purchased the cookbook and I plan to peruse it while in MN!
Crab and mushrooms together make me very happy. And I think stuffed appetizer-y things are automatically fancier than normal fare, so this is a nice recipe to have under your belt! In more ways than one, heh.
Those look delicious, but I don't do shellfish (possible allergy, definite vomiting). Any ideas for something I could use in place of the crab meat?
p.s. Where is Bailey? Still hiding under a blanket?
I need to check out that book in the worst way, so many people are talking about it! The mushrooms look wonderful!
