Whip it Up Week #4: Eggplant Rollups.

This week's challenge is not my forte.
Since I am a carnivore, I have a lot of recipes that I wanted to try that included meat. However I was able to dig one up that was truly vegetarian... I think. Unless cheese doesn't count?

Eggplant Rollups
From Rachel Ray Everyday Magazine May 2008 (I think it was May)
Serves 4

Ingredients

1 large eggplant (cut lengthwise into 8 slices)
Salt and Pepper
4 Large Eggs
3/4 cups Store Bought Pesto
2 1/2 cups bread crumbs
6 Tablespoons Extra Virgin Olive Oil
3/4 cup Ricotta Cheese
1/3 cup Grated Pecorino Romano
1 cup marinara sauce

1. Season the eggplant with salt and pepper. In a wide, shallow bowl whisk together the eggs and 4 tablespoons pesto. Pour the bread crumbs onto a large plate. Dip each eggplant slice into the egg mixture, then coat with the bread crumbs.

2. Preheat the oven to 350 degrees. In a large non stick skillet, heat 2 tablespoons olive oil over medium- high heat. Working in batches, cook the eggplant until golden, 2 minutes on each side, using the remaining 4 tablespoons of olive oil. Transfer the eggplant to a paper- towel lined baking sheet.

3. In a small bowl, combine the ricotta and 3 tablespoons pecornio- romano cheese; season with salt and pepper. Spread 1 tablespoon of the remaining pesto on each eggplant slice and top with about 2 tablespoons of the cheese mixture. Roll up each slice. Bake until eggplant is tender, about 10 minutes.

4. Meanwhile, in a small saucepan, bring the marinara sauce to a simmer. Serve the roll-ups with the sauce and remaining pecorino- romano.

Was this recipe easy to make? Extremely. It was very much like making eggplant parm. But with a twist.

Did it taste good? Oh. My. God. YES. YES YES. It was sooooo good.

Would I make it again? In a heartbeat. Although I think that I sliced my eggplant too thick. I am really bad at slicing. So I need to practice more by making this again.

Yum, I love eggplant. I just made a roasted veggie lasagna for this week and it was all I could do not to throw some sausage in there...

I love it when veggie dishes win over meat lovers. But eggplant is not my favorite, I admit.

This sounds really tasty! Plus, I could actually make this since touching eggplant won't make me want to die! I demand to see delicious pictures so that I can drool at my computer.
