Whip It Up: Thai Cucumber Salad

I don't know how those ladies at Whip it Up do it.... but they seem to read my mind every week.
This week's challenge calls for Salad recipes. Boy do I have a doozy for you....


Thai Cucumber Salad
Makes about 4 cups

Ingredients
2 tablespoons fresh lime juice
2 tablespoons sugar
1/4 teaspoon crushed red pepper
Salt
1 Seedless cucumber, un-peeled and thinly sliced crosswise
1 tablespoon sliced basil leaves
1 tablespoon snipped fresh chives
1 tablespoon minced cilantro leaves
1 tablespoon chopped peanuts


1. In serving bowl, whisk together lime juice, sugar, crushed red pepper and 1/4 teaspoon salt.
2. Just before serving, add cucumbers, chives, basil, and cilantro stir to combine. Sprinkle with peanuts to serve.


This salad was sooo yummy and really refreshing today since it was kind of warm outside. I have to say that I bought all of the ingredients (minus the sugar, lime juice and peanuts) and my local farmers market, so everything was really fresh and nice.

Would I make it again? Seriously. It took me about 15 minutes to make. And then about 10 minutes for me to inhale......

I used cucumbers with seeds in them... (shock! I know), but it didn't seem to make a difference. I love cucumbers.

How can you go wrong with cilantro, red pepper flakes, and peanuts -- they make everything taste better! And cucumbers start off pretty tasty, anyway -- thanks for this recipe!
