Whip It Up: Week 8 Coconut Curry Chicken

I cannot believe that this week is the last week for Whip it Up!!
Does that also mean that summer is over?? Because Hi. Where did you go summer?

This week's theme was Desserts... but since I have been good and followed the themes each and every week, I decided that this week I would be a deviant. Actually, I was flipping through the new Rachel Ray Everyday Magazine and found this easy recipe and decided to try it one night at home since I had all of the ingredients.

Now I am at work right now, and I have about 5 minutes to post, but I also do not have the recipe right in front of me. So here's from memory. I'll fix it later when I get home and after I post Bailey's weekly dig.

Coconut Curry Chicken
Rachel Ray Everyday Mag- 5 ingredient recipe

1 13.5 oz can of coconut milk
2 teaspoons of curry powder
2 teaspoons of 5 spice powder
Approximately 2 pounds chicken breasts, cut into strips
White Rice (I used brown rice)

1. Heat 2 tablespoons of olive oil in a deep saucepan. Add curry powder, stir together and heat for 1 minute. Add coconut milk, stir and simmer over medium heat until reduced by half, about 7 minutes.

2. Mix together 5 spice powder with a little salt and pepper and toss chicken with mixture until well coated. Heat 2 tablespoons olive oil to large/deep skillet and cook chicken in oil until browned, about 6 minutes.

3. Once chicken is cooked pour in coconut milk mixture. Serve immediately over rice.


So this week I was not a Whip it Up idiot, and I actually remembered to take PICTURES! Beautiful pictures of my food whilst cooking. After I ate my food and cleaned up I went to go take said pictures off the camera and realized that I didn't have my memory card in my camera.

WTF. Why doesn't it say that while you're taking the pictures. And no I do not have a USB cord that I can just plug into the camera. It's a long story but I lost it and now I use some contraption to take the pictures off my memory card.

Anyway.

This recipe too me maybe 20 minutes total to prep and cook and then eat.
It was so yummy that even Tim ate it.
That's saying a lot!

you had coconut milk in your apt? like not planned? I don't think I have ever bought coconut milk.

Umm, one time when Cody was out of town and I was home alone, late at night, I got super starving and there was nothing in the house to eat and then I saw we had some coconut milk in a can in the pantry. I like coconuts, and I thought - well, I'll give it a try.

It was NOT good and I got THE WORST GAS ever. TMI?
